Sweet Smoke Q Competition BBQ School: Led by Sweet Smoke Q’s Pitmaster and BBQ Engineer extraordinaire Jim Elser, this class runs 2 days and covers the techniques and flavor profiles used in competition today — covering chicken, ribs, pork and brisket. Also covered are meat selection, trimming, injections, marinades, rubs, sauces, cooking and meat temperatures, as well as FBA and KCBS box building. Pellet Envy’s Competition BBQ Class: Pellet Envy is the winningest team in competition barbecue since 2006. Killer Hogs “Barbecue Live” Competition BBQ Class: This 2 day class features Malcom ans Waylon Reed of Killer Hogs and Mark Lambert of Sweet Swine O’ Mine. The class focuses on KCBS competition procedures and also has a whole hog segment. A sure bet for anyone looking to learn from proven winning BBQ pros.
Pit Bull’s Up In Smoke BBQ School – Danny Coogle and the Up in Smoke BBQ Team offer a great online BBQ class that covers the four main KCBS competition proteins in a format that allows users to revisit videos online anytime they like. Great stuff.
Dizzy Pig’s Competition Class: Chris Capell leads this class, which has received high reviews from quite a few successful teams. Focuses mainly on KCBS format.
Kosmos Q Competition Class (DVD): Kosmo’s Q has won multiple grand & reserve grand championships in the very competitive world of competition BBQ.
