Swamp Boys Q School: Rub Bagby leads the Swamp Boys Q School, which is by far one of the best Competition BBQ Cooking classes out there. Those who take Rub’s Q School class have regularly gone on to win their first grand champion prize soon after. For two days, you meet with and gain critically important and valuable insights from Rub on how to prep and cook your chicken, ribs, pork, and brisket. Covers both KCBS and FBA format. Sweet Smoke Q Competition BBQ School: Led by Sweet Smoke Q’s Pitmaster and BBQ Engineer extraordinaire Jim Elser, this class runs 2 days and covers the techniques and flavor profiles used in competition today — covering chicken, ribs, pork and brisket. Also covered are meat selection, trimming, injections, marinades, rubs, sauces, cooking and meat temperatures, as well as FBA and KCBS box building.
